IGP Terre Siciliane
Welcome to the heart of a Mediterranean garden where you will be greeted by notes of citrus, orange flowers, sage, mint, white rose and acacias. Very well balanced on the palate, it has a surprising fresh bergamot finish.
Zibibbo grows in a single vineyard in Western Sicily on the slopes of the hills facing Castellammare del Golfo at approx. 300 m. a.s.l. Medium texture limestone soil combined with the warm air currents coming from the sea are ideal for the ripening process of the grapes. Vines are planted facing South West using the trellis system and guyot pruning.
A very unusual year. After a perfect spring with the right amount of rain and great sunny days until the end of July, we had 3 weeks of very intense heat that anticipated the development of the ripening process.
Hand picked on September 3rd. De stemming and skin maceration at 6-8°C for 36 hours, followed by soft press. Fermentation in Stainless Steel vats at 14°C for 20 days. The wine is then left on its lees for 30 days before being bottled.
