Sergio’s Favourite: Spaghetti con Zucchine fritte

How can something so simple be so tasty!?
Spaghetti with fried zucchini: for 4 people, you will just need 300gr of spaghetti, 2 zucchini, some mint leaves olive oil, salt and pepper.

While the water for the spaghetti is boiling, cut the zucchini in slices.
Heat some olive oil in a pan, and fry the zucchini until golden. Put them on a kitchen tissue to absorb the excess of oil, and sprinkle some salt and pepper.
When the water is boiling, add some salt, and pour in the spaghetti : cook them until they are “al dente”.
When ready, place some spaghetti in each plate, add some zucchini, a few mint leaves and finally drizzle some fresh olive oil.

You can add some fresh grated parmesan to finish: delicious!
